So I have this powered underseat alpine subwoofer, model pwe-s8 with a blown internal amp. I figured I would just bypass the internal amp and run it off my external but when I pulled it apart the speaker has 8 wires going to it, never seen anything like it.

That is the first I have seen with four voice coils. Measure the DC resistance of each to see how you may wire them. Could all in parallel or maybe series-parallel.
Quad-coil drivers are prevalent in car audio installations. It's not unheard of to see 4x1 ohm coils in a subwoofer. It's mostly for output, because the amplifiers send more power to really low impedances, and sensitivity is really high with 4 coils in parallel.

2 wires are red with black stripe and 2 are solid red, each set was reading 2.4 ohms on my Fluke.
Any insight on how to wire this thing up would be much appreciated 🙂 my amp puts out 200 rms at 4 ohms, hopefully it's not too much if I keep the gain down.
How much power can it have? => 120W (120 watts RMS/240 watts peak)
You could use 4 tpa3116 mono/ PBTL boards and get about 120W@12/14V, (and with a voltage booster@24V 400W clean) Add a $5 ebay variable low pass board and you are good to go for less then $25.

I seem to remember that back in the late 70s to early 80s Sony made speaker with a square woofer with 4 coils which was quite good.
But then they made some cheaper square ones with 1 coil which were quite bad.

Well I was hoping to throw a little more power at it with an amp I already have, I think the ratings given are for the internal amplifier, no way to know what the driver itself can take though. I guess I'll try to repair the amp it came with first to play it safe.
Did it play well at full power with the old amp? If so you could try some more power. 🙂

2) all 4 in series ->9.6Ohm
3) 2 parallel 2 in series ->2.4Ohm and drive them with a mono amp.
the 200W rms amp will put out at least 83W into 9.6Ohm with option 2.
