I have this 15” speaker it has a decent size magnet, the speaker is open circuit so I wanted to recoil it and use it as a sub. What do I need to know about this? How many turns? Is .5mm gauge wire to heavy? I know it depends on a lot of things but in general for about 350 - 500w rms.
It is constructed well so I guess it may handle it mechanically.

what's wrong with using the wire gauge that's already in it --
when you take the thing apart make absolutely sure that your work surface is free of any metallic particles
i have routinely rewound the KEF B139's when the miscreant children of the household try to get too many decibels out of them --

I will be putting 300 – 500w rms into it as (a sub) it’s a quality pa speaker.

how big is the gap between OD of former and ID of the magnet pole.
Subtract your coil to pole clearance and that leaves the room you have for wire.
now decide on 2 or 4 layers.
2 layers of thicker wire will give a low BL factor and low VC resistance.
4 layers of thinner wire will give a much higher BL and very much higher VC resistance.
Is there a gap in the former for a lead out wire? If so then you may be able to run a 1layer or 3layer coil but it will be MUCH MUCH more difficult to keep the VC and former round. Unless we have a poster here to help you solve the roundness problem with split formers.

I know about clearance and the basics, I tell a lye I have recoiled some speakers before ages ago but I was just mucking around they where crap speakers (I haven't done it the correct way)

If it is a decent PA speaker, chances are there is a recone kit for it. That might be the simplest solution, although more expensive than winding a new voice coil.
Don't forget that the voice coil is only one of the factors in determining a driver's suitability as a sub. You may wind a long coil thinking greater Xmax, but if the suspension isn't up to it, you're out of luck.

True but yeh it’s not going to work that well I just want it to work enough to use it and get some kind of bass out of it
It has 2cm peak to peak going on pressing and lifting the cone not too harshly.

if it's open, you may not even have to recoil, the pigtails are suspect, check it first and you may just have to resolder it to the coil or the terminal posts.........
the pigtails can get open and still look normal without signs of disconnect....
