Some critter chewed up my Paradigm PV60R in wall speaker and I need a replacement. Any recommendations given that this model is discontinued. Also, can I replace only one, or does the other need replacement too (to ensure sound continuity). It is the Right Front Speaker in a 7.2 system.

If the speakers are discontinued, how can you replace just one unless you buy used? Otherwise, the solution is to look to Paradigm for recommendations on the most compatible pair of replacements.
There are some aftermarket resellers that still have them in stock.
With that said, will I notice a difference in sound if I buy a single replacement of a different brand? Or do I really need to buy a pair of new ones for a problem like this?

Manufacturing tolerances can change over time. You probably could get only one replacement and since they're ceiling mount HT speakers, it might not matter. But the general rule is speakers should be replaced in pairs.

Yes, you can replace the one speaker with the same model type and be fine.
You might consider buying a pair so you have another spare speaker for when the critters eat that new one. Sounds like mice.

A nice metal grill to go over them might help keep out the mice.
