I have a Bravo V2 that I have modded (IRL510's, LM317A's, new caps) but I am wondering what I should use for an output resistors for my Sennheiser HD380 Pro's. The headphones have a nominal impedance of 50 ohms which to keep with the minimum 10-1 ratio would be a 5 ohm output resistor but would it be OK to use even a 1 ohm?

The 380Pro's open cousins would benefit from 1 rather than 5 ohms at least. The lower limit is given by stability and possibly short-circuit proofing considerations. If you can hang 10 nF on the output and it doesn't start oscillating wildly, you're probably fine.
