what solder fume extractor do you use?

I bought a Hakko FA-430. It wasn't cheap but I at least caught a little bit of a sale on it. It's been great. I like how it sits under my bench and I just have to run the arm up. I bought a cheap remote switch on amazon to toggle it on and off.

I have an extra bathroom exhaust fan that is super quiet and would like to use it on my bench for extracting solder smoke, especially since I work on vintage amps which I'm sure contain lead.

Can someone recommend a type of filter to use?

Charcoal filter sheets are available and you COULD use that material over the intake and replace it occasionally or use the canister as-is probably forever. In critical situations, draw through is preferred but for this application, pushing the fan output into the canister is fine. I accidentally introduced a spark to a working canister filter once and it was BLAZING away but self filtering at the same time. I could sense that something was wrong but there was nothing immediately noticeable (I was grinding/welding) until I decided to stop what I was doing and walk through the shop.
