Enjoy your trip! You can visit Switzerland as well, once you are there. Just a short drive. Also make sure that you have a vignette for Switzerland and other European countries https://vignettestore.com/. In Germany it is not needed and there is no speed limit on the highway, so perfect for those who like adrenalin.

I don't know about tubes in Münster, especially if you are limited to what you can reach on a bike. Probably easier to order online and have them delivered to the place you are staying at.
Hifisound in Münster is worth checking out. They are a hifi shop that also do DIY speakers. They've been around forever.

Unfortunately Omega Electronics closed down. They offered all kinds of parts for hobbyists. Sadly they are no more.
As far as record stores are concerned I'd visit Dortmund. You can take the InterCity and be there in under 30 minutes. I know of four record stores off the top of my head that you can reach on foot.
