Could this be configured to do 5v @ 3 amp for powering a Asus Tinker Board SBC?

With some modifications and use of flying leads to an externally mounted regulator chip such as the LT1085 you can get 5v at 3A. The capacitance multiplier will need to be mounted to a substantial heatsink as well. 3A x 3.5v is over 10w dissipation on the IRF610. Assuming you are using 12v upstream then you have 8.5v downstream and another 10w will drop off from LT1085. Circa 20w total. That’s a big heatsink. You could use a DC-DC step down and take the 12v to 9.5v then that drops less heat across the voltage regulator but still same on IRF610 (they are designed for thatbso not a problem with sufficient heat sinking).

I forgot to include the choke L101. Something like a ferrite core toroidal EMI filter with approximate 5A capability and circa 10uH value is good. 8mm hole pitch, 19mm dia max, 10mm thick max.
