Well they assemble so they would get pretty much everything but circuit diagram.
Assembly just require the x-y location and orientation of the part plus the finished board. If you are too worried about reverse-engineering, you should populate the board yourself.
Having the Gerber files and x-y placement of the unique parts is enough to recreate the complete schematic. It's not that difficult.
After receiving quotes in the mail from all kinds of PCB manufacturers I can only assume that Schiit must order an entire generations worth of product in order to get their stuff as cheap as they do..

The fab costs in the US I can live with, it's the assembly costs that tip the scales.
The difference between $1 per board and $3-$4 per board won't kill me but china adds
assembly for almost nothing while the US seems to double or triple the total cost when assembly is included.

Get the PCB's in China, I'll can recommend PCBCART, they also offer assembly but I won't recommend that. Don't let China assemble anything they use substandard local parts....
You should be able to find a local assembly house, don't think about getting you own machines, too expensive and require knowledge.
Don't worry too much about somebody stealing your design, as I usually say, if they have the skills to copy it, they have the skills to design it, they can always just purchase one. But it always help to have code that your load at testing...

I've found the people at PCBCart (AKA General Circuits) to be very ethical, extremely helpful and quick. I use them for everything I do and recommend them.
They also provide in house assembly which I have not tried.
Yeah, they are in China. The world is changing and there are good business partners if you look carefully for them in China.(Note that tariffs may be a problem soon for assembled PCBA coming out of China.)

No one is going to steal your design. No one cares about audio anyway and I have extreme doubts, given your basic questions, that your amp will live up to any of your simulated results.
... Advanced doesn't do assembly.
