The food thread

Lunch today was nice. Another one of those dedicated to someone no longer with us. This time it was Mom.

Ginger and green onion (four stalks onion to four good sized chunks of ginger) is minced in the food processor.
Add 3 tbsp. coarse salt and stir well.
Stir every 30 minutes for about 4 hours.
Add 2 cups of water, stir well and drain through a flour sifter. You can keep the salty ginger water for other things.
Leave in the sifter for 12 hours to continue to drying, stirring occasionally
Put it in a jar and cover with oil. I use canola with a hint of sesame.
Let stand for 24 hours. Stir each time before use.

We have a grocery store called "Spice World" which caries West Indian food. I have been sampling some of dishes from the prepacked and frozen sections. They tend to be head sweat/nose dripping hot. The Chicken Vinadaloo was using a spice packet, the Okra Masala was pre-packaged. Naan is home made as there is no reason to buy it frozen. Easy to fix and fry in a cast iron skillet.

After rebuilding my old weber grill twice over the past 8 yrs it's now in need of another .....parts are no longer available and on top of that the framework has decayed to the point of coming undone.
Mentioned this to the wife and got a unexpected reply that went something like I've had my eye on a clearance display model at tractor supply....and then she said let's go get it! Who am I to say no : )
Wasn't expecting much but I'll be if she didn't do quite decent in her choice!

Had some fun with a new pan today. I've been using cast iron or stainless for a decade or two, and thought I'd try out a new aluminum non stick pan.
Using the old springy touch test on a tuna steak, I got just the sear and pink I hoped for.
Sesame seed and a little smoked ghost pepper today, with some fresh lime juice and dill.
Squeezing the lime juice through a clenched fist is also a great way to notice a nick or two, lol.

Funny thing about the timing on getting the new grill (don’t know if its the wifes warped sense of humor?) but I just had both my upper wisdom teeth surgically removed last week due to them invading my sinuses with infection so won’t be able to eat a steak for another week at least maybe more!
Fat laden ribeyes are how I always christen a new grill but it‘ll be on the ‘back burner’ for a bit!
Wife says well you can cook me a steak, I just shook my head no and walked away and as I went around the corner I heard ‘well I’ll just cook my own steak on it’ ……..now I’m usually not a violent man, but when provoked been known to instill regret into the souls of the flippant. Don’t know if she was kidding around or what but she definitely now regrets saying that……way too much profanity for the forum so you’ll just have to use your imagination! :ROFLMAO:

Fantastic buttermilk pancake recipe. We used a cup of blue berries in ours. They are thick and fluffy so the griddle temp is critical. Ordered a cast iron skillet so I could get nice even heat. Put leftovers in the fridge and micro wave them or treat them like donuts.

I put blueberries in our waffles. Cleanup tough but oh so worth it.
